I’ve mentioned before that I love using ready made pancake mix. You purists can scoff but I love me some Aunt Jemima. My mom insists that it’s just as easy to measure out flour, baking soda, sugar, water and a pinch of salt. However, should it come down to a pancake race, my money is on my quick pour and stir reflexes. One time I made pancakes from scratch using a PW recipe and Addison’s response was…”what is wrong with these pancakes?”
Since then I have been faithful to Aunt Jemima. However, plain pancakes can get a little boring after a while so I try to mix it up a bit by adding different flavors. It keeps the magic in our relationship alive.
I also have a cute little pancake pan from Williams-Sonoma that makes them look like mini waffles. Cuz’ I’m all fancy like that. My pancake aficionado also insists that they taste better when they are in the shape of silver dollar waffles rather than a regular old skillet pancake.
Banana Cinnamon Pancakes
Ingredients:
2 cups Aunt Jemima Buttermilk Complete pancake mix*
1 1/2 cups water (approx. add more if you need a thinner batter)
1 ripe banana, smashed
1 cup cinnamon flavored apple sauce**
2 Tbs. wheat germ
Mix everything together and make pancakes. It’s that easy!
*If you are going to use pancake mix, make sure you get the kind that says all you have to add is water. KISS those pancakes: Keep It Simple Stupid.
**I like Sprouts brand cinnamon applesauce. It is very cinnamon-y.

Love that pancake pan! I always use Bisquick…never tried the Aunt Jemima but now you have me thinking that I should. I made scratch pancakes once or twice but honestly don’t like them as much. They weren’t as flavorful. Anyway..this recipe looks great and I’m sure they’ll be a hit at my house. My kids think I’m mom of the year when I make stuff like this for dinner. 🙂
