Roast Cauliflower on the Grill

Roast Cauliflower

One of the things I love about summer is the grill.  It keeps me from having to use the oven and heat up the kitchen, it cooks quickly and everything is so delicious.  Roast cauliflower could not be easier.  Run to the store right this minute to get a head of cauliflower and you will be on your way.

Ingredients:

1 head of cauliflower, chopped
Sea salt
Pepper
Dried herb mix
Olive oil
Aluminum foil

Heat grill to 550.  Place cauliflower on a sheet of aluminum foil.  Drizzle generously with olive oil, sprinkle with sea salt, pepper and herb mix.  (When it comes to herb mix, nearly anything will do.  I like Herbes de Provence but a dried rosemary/parsley/garlic blend would be nice.  Just use whatever you are comfortable with.)

Place foil and all its savory contents on the grill.  Close the lid and let it roast for about 5-10 minutes.  Stir cauliflower, add more olive oil if it seems dry and grill for another 5 minutes.

Voila!  Fancy restaurant roast cauliflower that you don’t have to get all dressed up for and pay a 500% mark up.  You’re welcome.

this looks good. I don’t have a grill, but I do these in the oven – best way to get the boyfriend to eat his veg!

The cauliflower was outrageously delicious. Brown spots were the best! This time I used Italian Herb blend with the sea salt, pepper and olive oil. Definitely trying this again.

Also, my granddaughter then added some leftover white rice and made it a neat little lunch for the next day.
