Banana Chocolate Chip Muffins

I  made these for teacher appreciation a few weeks back and I think they were a hit.  Well, I’m not really 100% that they were a hit because I wasn’t there when they were consumed at the school but I was there when they were consumed at my house and they got two thumbs up.  I can only assume the teachers appreciated them as much as I did.

Disappearing Zucchini Muffins

In my life long mission to get my kids to eat green food without them knowing it I have come up with my own version of zucchini bread.  I like to think of myself as a green food ninja.  Stealth and sneaky, you don’t see me coming until you have already consumed some form of vegetable and then I do a tuck and roll across the living room and out the back door. Instead of flinging throwing stars around the room I’m pelting you with vegetable laced baked goods.  Bruce Lee meets Martha Stewart meets Jessica Seinfeld.

This is a variation on my Super Moist Banana Bread only instead of bananas there is zucchini.  I’ve dubbed these Disappearing Zucchini Muffins because they all disappeared into hungry tummies in less than 24 hours.

Should you choose to be your own super food ninja, here is what you will need:

1 1/3 cups flour
3/4 tsp. salt
1/2 tsp. baking soda
1/4 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg (fresh is better if you have it)
1/4 tsp. ground cloves
1 tsp. garam masala
5 1/2 Tbs. butter, softened
2/3 cups sugar
2 eggs, lightly beaten
1 1/2 cups grated zucchini
1 1/2 cups butternut squash puree

Preheat oven to 350.  Combine first 9 ingredients in a bowl and set aside.  In a mixer, cream together butter and sugar (about 2-3 minutes).  Add eggs and combine.  Add dry ingredients little by little until combined.  Mix in, by hand, zucchini and butternut squash until combined.  Check out my recipe for Super Moist Banana Bread if you need help with butternut squash puree.

Spray muffin tin with cooking spray and fill each one 3/4 full of batter.  Bake for 20-30 minutes or until toothpick inserted into muffin comes out clean.

Your lesson for the day is done, little grasshopper.

Strawberry Skillet Cornbread

Photo disclaimer: The photos in the this post are horrific.  My little point and shoot Canon was awesome 7 years ago.  Now, not so much.  Regular ol’ kitchen lighting + old, tiny camera = crappy photos (no matter how much amature editing I try to do in iPhoto).  So I apologize for these ugly, yellow pics.  However, I’m beyond the moon excited to announce that I have a new “big girl” camera.  A Guardian Angel read that I was wishing for a new camera and blessed me with her Nikon that she no longer uses.  I can’t tell you how excited and appreciative I am.  As soon as I figure out what all the buttons, dials and numbers mean you will be seeing much improved pictures here.  Until I figure those dials and numbers out you will be seeing my trial and error with a new camera.  Either way, I’m psyched.

Drop Biscuits

I realize that I have posted a lot of food lately.  I really don’t intend for this to become a food blog.  However, I make everyday food everyday.  It is such a part of my daily life that when something goes right in the kitchen it gives me a little bit of joy and I want to spread that joy to you.  So for now, please indulge me this lesson in drop biscuits. Bagels, come’n get ‘um!

Today I made bagels! It was super easy; anybody could do it…as long as you have a bread machine. If you don’t have a bread machine I suggest you hop on over to amazon (after you’re done reading this of course) and get one. Assuming you have the cash to spare and your not on a self imposed spending freeze like I am. I have the Panasonic SD-YD250 and I have enjoyed it. It has a option to make dough (among other bread type things).  That way you can make pizza dough, dough for french bread, rolls, bagels. You name it.

I found this recipe on thepioneerwoman.com/tasty-kitchen. It’s a great site that lets you share your favorite recipes. But enough about another site. (more…)
