Frozen Blueberry Bites

My kiddos love frozen treats.  We’re no stranger to popsicles in the summer heat.  Heck, it’s practically a food group for us when the temperature is 101. I’m trying to think of a little freezer variety and came up with these frozen blueberry bites.

Ingredients:

1 cup blueberries
1 cup sweetened greek yogurt (I used honey flavor but strawberry or vanilla flavor would work just fine)

This is really easy and fun to do w/ the kiddos.  It’s only three easy steps.

1.  Mix blueberries and yogurt

2.  Drop blueberries onto a baking sheet lined with parchment paper.

3.  Freeze blueberries for about 1 hour.  Once the yogurt is hard, transfer them to a zip lock back for storage.

I love these because when I’m tempted to get a sweet fix from a handful of M&Ms or a cookie, popping this little treat will satisfy.  Although, there really isn’t any substitute for chocolate, but it’s good to make an effort.

This would also be good with other soft fruit like banana, kiwi or strawberries.

Raspberry Champagne Cocktail

BFF came over last night bearing gifts.  She found limited edition retro Ball canning jars at Target and bought a pack of 6.  You never know when you’re going to need a blue mason jar for, you know, serving frozen drinks in a cute glass.  A set of 6 was $10.  Could you find a set of super cute glasses at Pottery Barn or Williams Sonoma for $10?  I think not.

She also brought Talenti raspberry sorbet and Champagne.  Talenti is more expensive than your run of the mill store brand sorbet but you can totally taste the difference.  It’s so smooth and creamy with zero fat grams and only 120 calories per serving.  It’s worth spending the extra few bucks when you want to treat yourself.  This stuff is pretty special so don’t waist it on the kids.  Just give them that big tub of orange sherbet and save Talenti for girls night in.

We poured the Champagne over the sorbet and applauded ourselves for being so precious.  How fabu is this…

Next time we’re going to add a splash of Peach Schnapps.

Personal Tuscan Loaf Pizza

Have you discovered the Archer Farms Tuscan Loaf at Target?  Oh my gosh, it’s a revelation.  I’ve been told that if you go early in the morning you can smell the loaves and rolls coming out of the oven and it’s heaven.  Word of warning…if you are trying to watch your carbs then maybe you should stay away from the Tuscan Loaf.  One taste of it toasted with a little butter and you might inhale the entire thing.

Recently I was feeling the call of pizza but didn’t want to go to the trouble of making my dough and wanted something a little bit healthier option than our  usual go-to frozen pizza. (more…)

Bananas Foster

Yesterday was a huge dinner fail.  I tried to make a sausage, kale and gnocchi soup in the crock pot.  I actually wanted to use frozen tortellini but Sprouts didn’t have any so I opted for frozen gnocchi instead.  The gnocchi was gummy, tasteless and discussing.  Sprouts, I love ya but go back to the drawing board on those frozen gnocchi. Blech.  I scooped all the gnocchi out and added rigatoni instead.  It was tolerable.

Homemade Granola

Homemade granola…just saying it makes me feel all…granola-y.  I wonder if I can find my Birkentocks from college.  There’s also something about it that makes me feel wholesome and healthy.

The great thing about homemade granola is you can put about any ingredient that you can imagine and it will probably be great.  Well, don’t try to put something like brussels sprouts or anything crazy like that, but nearly any combination of nuts, dried fruit, chocolate or some other sweet would be yum.  You can make granola as plain or adventurous as you like.  Whatever crazy combo you think your family will go for is a fun game to play, but be careful.  Eat too much granola and the next thing you know you’ve signed up for the co-op membership to REI and only wear Teva sandals and Columbia brand pants that have the option to unzip and turn into shorts.

Banana Chocolate Chip Muffins

I  made these for teacher appreciation a few weeks back and I think they were a hit.  Well, I’m not really 100% that they were a hit because I wasn’t there when they were consumed at the school but I was there when they were consumed at my house and they got two thumbs up.  I can only assume the teachers appreciated them as much as I did.

Oven Baked Chicken Tenders

We eat a lot of chicken so I’m always trying to come up with new ways to serve it.  This week I tried my hand at oven baked chicken tenders.  As much as I love deep fried chicken tenders we all know it’s not a good idea to eat them as often as I would like.  Oven baked tenders doesn’t give you all the yummy greasy-ness and thick crispy crust that you get at Raising Cain’s but at least your health conscience side can feel good about it.

Hawaiian Fried Rice

If you’re like me you have half a ham left over from Easter.  Ham sandwiches are awesome but you can only eat so many before you begin to resent them.  My mom will take the bone and make some sort of amazing ham and bean concoction that would feed an army.  I however, opted for fried rice.

Roast Chicken and Homemade Stovetop Stuffing

I will admit that I have purchased, cooked and consumed Stovetop Stuffing in my life.  It was before I knew any better.  Please don’t hold it against me.  This recipe is far removed from the gummy Stovetop concoction that comes out of a box.  If everybody in the U.S. could realize this, Stovetop would go out of business.

The Feb/March issue of Cooks Country magazine had a great recipe for roast chicken with easy stuffing. Unless you’re an online subscriber you can’t get the recipe on their website.  But guess what?  I’m going to give it to you for free.  Shhhhhhhhhh.  Don’t tell anyone.  Fortunately, I’m a nobody and the blessed cooks at CC don’t know I’m doing this.  If I get a cease and desist order I’ll be flattered.

I made a few adjustments to this recipe.  I added brussels sprouts and mushrooms.  Cooks Country should consider altering their recipe.  It was the bomb.

Ingredients:

1 whole chicken, rinsed and patted dry.  Discard anything strange you find inside.
6 Tbs. unsalted butter
4 Tbs. dried herbs de provence mix (CC said to use 2 Tbs each of fresh sage and thyme.  I didn’t have that on hand so I made do)
salt & pepper
1 onion chopped
2 celery ribs, chopped
1/2 lb. brussels sprouts, rinsed and cut in half
1 1/2 cups sliced mushrooms
1/2 loaf fresh italian bread, cubed, about 6 cups
1 can low-sodium chicken broth

1.  Adjust oven rack to lower-middle, preheat oven to 375 degrees.  Melt 4 Tbs. butter in microwave, stir in 2 Tbs. herbs., brush over chicken.  Season well with salt & pepper.

2.  Melt remaining butter and 1 Tbs. olive oil in an oven safe skillet.  Add onions, celery and salt & pepper and cook until softened, about 5 minutes. Add remaining herbs.  Add brussels sprouts and mushrooms and cook until softened, about 5 minutes.

3.  Place bird on top of veggies and arrange bread cubes around chicken.  Transfer skillet to oven and bake, uncovered, for 1 hour and 20 minutes or until thigh registers 175 degrees with a meat thermometer.

4.  When chicken is done, transfer to a plate and loosely tent with foil.  Pour half a can of chicken broth over bread and stir to combine.  If the stuffing seems dry add broth little by little until you get the consistency you prefer.

If you can time it where you pull this out of the oven just as your husband walks through the door he will be yours for life.  Or you could mess with his head and have on a apron and pearls and martini waiting for him.  Just sayin’
